What cookin’ Good Lookin’? This week we were able to bust out one of my FAVORITE things about Summer… THE GRILL! (Somewhere off in the distance I can hear the echos of Olaf singing?)
This puppy was given to us from the In-laws, and we certainly use it! I could probably count on one hand how many times I used the
Inferno Machine oven to make suppers last summer. There is somethings so intoxicating about the smell and taste of a meal cooked on a grill.
—NOTHING ELSE LIKE IT!
So we indulged in one of the all time best meals ever made on the grill. I don’t even have a name for it? But… that just makes it that much more mystical and A-MAZING. Here it is…
The best, MOST delicious, healthy, simple, and AMAZING: Meal on the Grill Recipe
2 turkey kielbasas
1 whole zucchini
4 medium sized carrots
1 purple onion
1 red pepper (which I had already frozen… Check out how to do this in one of my past post, How to Freeze Veggies
1 yellow pepper
1 orange pepper
2 tablespoons of EVOO
Step 1: Heat grill to medium heat.
Step 2: Clean, slice and dice the veggies and meat how ever you wish. I use a slicer and cut mine about 1/4″ thick. Place them in a large bowl.
Step 3: Pour EVOO into the bowl with the veggies and mix evenly.
Step 4: Place veggie/meat mix onto a grill pan. (I use a disposable foil grill pan) Place on grill.
Step 5: Use grill tongs to toss and mix around about every 5 minutes, until the Kielbasa is heated thoroughly, and your veggies are cooked to your liking. We like ours pretty crisp.
You can be creative with this meal. Add different veggies (we like cherry tomatoes) or instead of using EVOO, you can substitute with Italian Dressing. We also like to use different meats sometimes… Marinated chicken, beef, or even shrimp!
The great thing about this recipe is that it is DELICIOUS, but it is also so easy! You can even save time by pre-cutting everything, throw it in a large freezer bag, and freeze until you are ready to cook it! A fantastic way to have quick summer meal!
