In light of Cinco De Mayo, I wanted to share with you a little something simple. Mango Salsa & Red Pepper Chicken! It’s so easy, and can even be made in the microwave with Pampered Chef’s Deep Covered Baker!! It doesn’t get any easier than that folks!

Here is what you will need,
Pre-made Mango Salsa
Fresh or Frozen Red Peppers
Step 1: Place frozen chicken breasts into the Deep Covered Baker. (or a oven friendly cover-able dish)
Step 2: Pour 1/4 cup Salsa onto chicken and place in the oven/microwave.
For the oven set the temperature to 400F and cook covered for a total of 30-35 minutes or until the juice runs clear. For the microwave you will cook covered for a total of 12-15 minutes.
Step 3: Midway through cooking time, rotate the chicken (to allow for even cooking), and add your red peppers. I also added another 1/4 cup of salsa at this point.

Step 4: Check to make sure your chicken is cooked thoroughly, and then garnish with some extra salsa. (I even added some diced jalapenos to the salsa to give it a extra kick!)
So as I said, this meal can be made in the microwave, but also in the oven or slow-cooker. It paired really nicely with a corn/black bean/Quinoa mixture. YUM!!!
