This recipe was one of those, “Fly by the Seat of Your Pants” kind of things. But don’t let that fool you, because it was soooooo gooooood! It was a hot day out and the kids already had lunch and were napping, so I decided to make myself a treat! I noticed some of my mango’s were pretty ripe and it was now or never for them. Instead of just cutting them and eating them, I chose to create something fun and rewarding!
This was super easy, can be done in a flash, and not to mention… It looks gorgeous! You can’t beat those colors!
DAIRY-FREE BERRY MANGO SMOOTHIE
1 1/2 cup of frozen blueberries
1 1/2 cup of frozen RASPBERRIES
1. The first thing i did was threw the blueberries and 2 tsp. of almond milk into the blender and pulsed until smooth.
2. Once it was the texture I wanted, I poured the mixture into the bottom of the glass.
3. Then I repeated this process with the raspberries.
4. Lastly I pureed the mango without adding the almond milk. Since mangoes are already so juicy, the almond milk isn’t necessary. I then garnished with fresh RASPBERRIES!
Easy Peasy!!! This was such a treat to have while enjoying the sunshine on our new deck! The colors were just as delish, and the way that they layered in the glass, I couldn’t help but feel like I escaped for a few minuets to a tropic somewhere. ahhhhh!
I did use just regular unsweetened almond milk, but I think next time I may use coconut-almond milk? That may give it a nice extra kick of tropic! Overall, this definitely brought back my love of mangoes and certainly helped to get rid of some of the fresh farmers market berries from last season! It was a good afternoon!
