Meatloaf is a staple in this house! The kids love it, which is a bonus, and we have found so many different ways to make it that it has seriously become almost an exciting challenge to come up with a new ingredient. ha! So some are kinda, eh… but this one… WOW! Delicious!
Now this is a meal that you can even make in the microwave using Pampered Chef’s Deep Covered Baker, or the old fashioned way in the oven! This time around I was running out of time for creating something amazing, so I went with the microwave. I swear, it still comes out just as juicy and fabulous!
Southwest Chipotle Meatloaf
2lbs lean ground beef
1 cup bbq sauce
1 cup plain panko
1 cup white onion- chopped
3 cloves garlic – minced
1 medium sized hot banana pepper – chopped
1 tablespoon sea salt
1 tablespoon crushed black pepper
1 tablespoon chili powder
2 tablespoons chipotle chili pepper seasoning
1.Combine all ingredients (minus 1/2 cup of bbq sauce) into a medium size mixing bowl.
2. mold into a meatloaf form and place in deep covered baker. (or oven safe backing dish)
3. depending on cooking method, microwave covered 20 minutes, or bake uncovered at 400*F for 60-75 minutes. in the last 10 minutes of cooking, brush on remaining bbq sauce.
See that! Super simple, quick, and fabulously delicious! This one had a little bit of a kick to it, but it was still yummy!! Manga!
