Hey everyone! I have to start this one off by explaining that this was totally a last minute meal, that ended up rockin’ the socks off the hubby! It was already 1pm and I had a friend over. We were talking about dinners, and BAM.. it hit me! I forgot to make something for supper!!! So I scrambled in the pantry and threw it all together.
Once supper time rolled around, I was so surprised that everyone loved it! I had never put chicken in our chili before, so I was pretty anxious! There wasn’t a empty belly in the house after this one!
easy SLOW COOKER chicken chili
2 large frozen chicken breasts
1 can of kidney beans(Drained)
1 can of black beans (drained)
1 large can of crushed tomatoes
1 can diced tomatoes
1 can of diced tomatoes with chilies
1 pkg of chili powder mix
1 large white onion
TORTILLA Chips (optional)
Sour Cream (optional)
Shredded Cheddar Cheese (optional)
1.Combine all ingredients (minus the GARNISHES) into the slow cooker. Cook on high for 1-2 hours, stir, and cook on low for another 2-3 hours.
2. remove chicken breasts and cut into 1″ cubes. Stir chicken into chili mixture. garnish and serve!
I threw on a garnish of tortilla chips, sour cream, and cheese because I looooove a creamy chili with added crunch! It certainly hit the spot, and for as easy as it was… I’ll be adding it to the regime of quick meals for sure!
