This meal is great for fall… it is a little comfort mixed with fancy pants! When my brother was home on leave I made a hug batch of this. I was nervous that the kiddos wouldn’t care for it since its main marinate is red wine, but I was wrong! They gobbled it up!
This meal was also a great addition to our Dairy Free list! For those of you who aren’t certain how to many the dairy free potatoes… I just substitute the milk with chicken broth! Yum! As long as you use the mixture to puree them, they still turn out just as creamy.
The cooler the weather, the more we like to make meals that include mashed potatoes. This meal was a fantastic change from our usual chicken or meatloaf.
Red Wine French Beef Stew
3 pounds stew beef
salt and pepper to season
1 bottle of red wine
1 onion sliced
3 cloves of garlic minced
Meat and zest of one orange or grapefruit
3 peeled and halved carrots
3 springs of fresh thyme
2 bay leaves
6 oz can of tomato paste
4 1/2 cups of water
1.season beef with salt and pepper and place in a mixing bowl. Add red wine, onion, garlic, meat and zest of fruit, carrots, thyme and bay leaves. marinate in red wine for 12-24 hours.
2. after marinated, brown beef in a stock pot with olive oil.
3. once browned, add marinade and allow to boil for 5 minutes. reduce to a simmer, add tomato paste and water.
4. place lid on pot, and simmer for up to 3 hours.

I really enjoyed this meal, and even with the complexity of time in this recipe… it is an amazingly delicious meal. After sitting in the marinade, and then simmering for so long, the beef just seems to melt in your mouth! The ingredients lists all works together to accent each piece, giving it a unique flavor that is worth the wait. It would be so nice to cook this on a colder weekend, so you can enjoy the aroma throughout the day. Truly invigorating!
