I’m sure you have started to notice the trend. Not all days go as planned, and that even though I plan my meals out monthly, sometimes there are days where I forgot to thaw out meat, or I just simply don’t feel like eating what was on that day. Then.. the panic starts in.
Chicken is usually my go-to because it is simple enough to thaw out quickly. This particular day was a chilly fall day, so I imagined myself indulging in a good cup of soup! And hence…a recipe was born!
I love a little crunch in my soup, so the fact that this is a quick soup to make, some of the veggies still are left with a slight crunch. With a mixture of flavors, textures, and quickly thawed chicken… I was ready to rock and roll!
Simple 30 minute tortilla soup
2 large chicken breasts -cooked and chopped
2 medium-sized onions
4 cloves minced garlic
1 bag of frozen corn
2 medium-sized chopped carrots
1 can of black beans – drained
1 can of tomato and chilies mixture
15oz chicken broth
15oz VEGETABLE broth
2 1/2 teaspoons of chili powder
1 1/2 teaspoons of ground cumin
3/4 teaspoon paprika
salt and pepper to taste
1 fresh squeezed lime
4 tortillas (optional)
Cheese to garnish (optional, omit for a dairy free meal)
Tortilla chips (optional)
1.Add all ingredients (minus the garnish and tortillas)to a stock pot. Bring to a boil and cook until carrots are well cooked through. About 15 minutes.
2. reduce to a simmer. Then Cut tortillas into small strips and place into the soup. Cook for about 10 minutes. garnish and serve.

Yes.. seriously. It is THAT easy! Don’t skim over the instructions! They are so easy and simple, you might miss them. Ha!
So on a busy school night, or in our case, youth group night.. this recipe is fantastic to warm the bellies and create a healthy meal for a busy family. This was great for the kids too, it wasn’t too spicy for them. I enjoy adding an extra crunch with the chips. Finger lickin’ good!
It is great for fall, or summer because the flavors are so versatile. And here is a hint… I actually forgot to thaw out the chicken this day, so I just put both pieces in the microwave, and thawed/cooked them right in there! Zap them for 20 minutes and you’ll have plenty of time to add them in! Still under 30 minutes for a meal! Amazing.
