I’m a huge fan of cream based soups! This meal was a huge hit! We loved it so much that we added it to our “comfort food” list. ha! All in all, this meal only took 30 minutes to create, and I used last-minute ingredients that I already had. Beat that? I think not!
I was actually having a crummy day, and my best friend/ neighbor stopped by with some fresh-baked bread. So my first thought was… SOOOOUUUP!
Loaded creamy Potato Soup
6 strips of bacon
1 yellow onion
1/4 cup flour
1 box of chicken broth
2 cups of heated milk
2 lbs of potatoes
1 bag frozen corn
1 cup of shredded cheddar
salt and pepper to taste
toppings (optional): Bacon, shredded cheddar, chives, etc..
1.In stock pot, cook bacon. Transfer cooked bacon to a paper towel to dry, but leave the bacon grease inside stock pot. Add chopped onion. cook 5 minutes.
2. slowly stir in flour to create a thickening base. stir in chicken stock. once this starts to simmer, add milk, potatoes, and corn. boil and Stir occasionally until POTATOES are cooked.
3.Add shredded cheddar, salt, and pepper. mix THOROUGHLY, garnish and serve.
