As mamas, the struggle can be real. Often we catch ourselves making chicken fingers for our little ones and making a few extra for ourselves. Maybe we don’t feel like cooking that night, but why? Why are we struggling at the thought of making two different meals? If it’s “unhealthy” why aren’t they eating what we have planned for ourselves? My motto is, if you don’t buy it you won’t eat it! Be an advocate :).
With the dreadful swimsuit season around the corner, instead of rolling our eyes in the mirror this spring, how about we set some goals.
Get out a pen and paper. Write down 5 goals you have for a healthier and happier you. Take a magnet and hang them on the fridge as a reminder that abs aren’t just made in the gym, but the kitchen as well. Make some healthy changes in your life and you will be thankful you decided to finally take the plunge.
I often walk quickly pass the swimsuit isles myself as I pretend like it’s still winter here in PA. Let’s face it, our bodies change after baby. The scars remind us though how beautiful life is and how short it is to be unhappy with the way we look. We also don’t want our children growing up seeing us unhappy with our self-image either. That’s when I made this promise to myself; my number one goal every day is to cook a healthy homemade meal. If I accomplish nothing at all besides this goal, everyday, I can personally fall asleep happy!
Our kids deserve the best, so I’ve learned to broaden my child’s outlook on food. I’ve mustered up the energy to cook healthful meals every night with the thought that a healthy child is a happy mama. Our children can have the best of both worlds if we get creative in the kitchen for our picky little eaters. Let’s teach them the world of what real, wholesome food tastes like.
With that being said, I’ll be sharing my two of my favorite recipes. Healthy homemade chicken fingers and protein balls!!
Guilt-free food is my guilty pleasure! No more food-fights in my house.
Organic Gluten-Free Chicken Fingers
1lb. of organic chicken strips
1C. of organic almond flour (meal)
1/2 tsp. sea salt
1 tsp. garlic powder
2 organic eggs
3-4 tsp. of extra virgin unrefined coconut oil
1. In a medium bowl, mix almond flour and seasoning together.
2. In a separate bowl, whisk the 2 eggs and water.
3. Dip each chicken strip in the egg, then coat with the almond flour seasoning mix.
4. Heat the coconut oil in a medium skillet over medium to high heat.
5. Saute the chicken in the oil for 3-6 minutes per side until golden-brown. ENJOY!
Organic Peanut Butter Protein Balls
¾C. organic peanut butter
1tbsp. organic coconut flour
1/2C. vanilla whey protein (I prefer swig)
1tsp. vanilla extract
3-5tbsp. unsweetened organic coconut milk (add more as needed for dough like texture)
2tbsp. chocolate chips (your choice; semi-sweet, milk chocolate etc.)
1. Mix all ingredients together
2. Form them into small balls.
3. Then press in chocolate chips by hand. (Store in glass container in fridge)
