I was never really sure about adding seafood to a taco dish, but once I stepped out of my bubble and tried these… I was shocked!!! I actually fell in love with this dish while making it, all the colors were pretty intoxicating. After I tasted the combination of ingredients I knew it was something to add to our favorite meals list.
These babies do have a slight bite to them, but the great thing is that you can control just how much! Simply add more/less jalapeno, and choose to use a different heat of taco seasoning. It’s that easy! If you add a Chili Lime Cream Dip it will also help to cool it down a bit. BUT… the best thing about this meal is that it takes less than 20 minutes to create! Add some tortilla chips on the side to enjoy some crunch with your left over salsa and you have dinner for you and your family.
SHRIMP & MANGO SALSA TACOS
1 pound of shrimp per 6 servings, thawed and peeled
1 package of taco seasoning of choice
1 teaspoon of olive oil
2 fresh (not frozen) mangoes, peeled and chopped
1 red onion, peeled and diced
2 tablespoons of jarred jalapeno (more if you prefer more heat)
1/3 cup of cilantro, chopped
Tortilla chips for dipping
Extra cilantro for tacos
Chili Lime Cream Dip
- Rinse shrimp with cool water. Make sure to lay flat and pat dry after shrimp is cleaned.
- While shrimp is drying heat olive oil in a large pan to medium-high heat.
- Place shrimp in a medium-sized bowl and toss in taco seasoning. Mix together until the shrimp is well coated. Place in pan stirring often. Saute for about 5 minutes or until shrimp is fully cooked. DO NOT OVER COOK YOUR SHRIMP.
- Meanwhile, you can always prepare salsa by combining all ingredients listed together.
Once shrimp is cooked, and salsa is prepped you can assemble your tacos, and enjoy!
Just the colors alone in this dish are enough to make anyone drool! I love how fresh and light this meal is, giving it a nice mix of heat and texture. This is also a meal that work great in groups! Something you can use for your next outdoor BBQ perhaps?
The kiddos got a kick out of the fact that we were eating FRUIT salsa for dinner. But hey, whatever works right? This is also a great meal that can be thrown together in a jiffy! Just prepare the salsa ahead of time, and then all you have to do is cook the shrimp up for a quick and healthy weeknight dinner. The salsa should stay well in the refrigerator for about 2-3 days.
