I am loving quick and easy meals lately! Life has been hectic this month and we are only a week in. Between the school’s Holiday Shop, dentist appointments, church Christmas Play practices.. you name it and we’ve seem to have done it this week! (I’m sure you can relate to this right now) Needless to say, meals have been hit or miss and my family is looking at me like, “Woah!! sloooow down Momma!”.
I do feel super crazy this week, and I think once it is over I will finally be able to relax. In the meantime I wanted to spoil myself with something delicious and well deserved that was LOW MAINTENANCE and quick! This Hot Cheese and Bacon Brussels Sprout Dip was just the ticket.
This dip hit the spot so well that it will be put on my “Comfort Food” list. Let me rewind a minute and tell you a little about my grandma. When I was away at college she would sometimes pick me up from my school 2 hours away and take me home for the weekends. It was always a special treat for me because not only did she take the time to do this, but we would stop at favorite restaurant on the way home! It was tradition for her to always get her weakness from the menu, a Bot Spinach and Artichoke Dip. Yum! So when I created this rendition of a hot dip, not only was my busy self delighted with the amazing taste and easy recipe, but it also gave me a heart warming sense of having Nana close, which really helped to calm my heart from the
stressful busy week.
Giant Eagle makes my life easier, not only because it is less than a 5 minute drive from our house, but also because they really do have everything we need for a week like this. Once we actually decide on a meal, I can always find what I need there and I’m in and out in a short time. Giant Eagle provides everything needed for the busy holiday season. I know that if they don’t always have the brand that we would “typically” get, I can depend on them to offer a great selection of Giant Eagle Store Brand which is always delicious. Also- good fresh foods are hard to come in our area, but I know that they will always have the goods we need and if I can’t find it someone is always eager to help a girl out. I found all the items I needed for this recipe at our local Giant Eagle! For a busy person like me, I need to be able to depend on someone or someplace to have my back. I found the items I needed and more!
While I was there I picked up some extra things that I know will make my day easier! For example, Dannon Light and Fit Yogurt Drinks are something I can just grab and go on these busy days, and a quick glass of Tropicana Orange Juice. Both help to kick-start my morning!
I think if you add bacon and cheese to anything it immediately makes it appealing! So I knew my son, who is typically picky would love this even with it being Brussels Sprouts based. Annnnd… I was right!
Hot Cheese and Bacon Brussels Sprout Dip
1 Bag Birds Eye Frozen Brussels Sprouts
1/2 Tsp Salt
1/2 Tsp Pepper
1 Tablespoon Minced Garlic
1 Tablespoon Olive Oil
3 Cups Shredded White Cheddar
6 Slices of Bacon, cooked and broken into pieces
1/2 Cup Sour Cream
1/2 Cup Mayonnaise
Giant Eagle Tortilla Chips
- Preheat your oven to 425 degrees F.
- In a medium-sized mixing bowl, combine brussels sprouts, salt, pepper, olive oil and garlic. Toss into an oven safe dish and place in oven: cook uncovered for 15 minutes. Meanwhile, while these are roasting, cook bacon so that it is crisp enough to break apart and set aside.
- Remove brussels sprouts from oven, and cut each into 1/4 pieces. Combine the remaining ingredients into the roasting dish and mix together evenly.
- Place into the oven and cook on a reduced heat of 400 degrees F for 15 minutes.
- Serve with some great dipping finger snacks and ENJOY!
I will definitely be including this appetizer in our holiday meal this year! It will be such a nice way to carry our grandma close during our meal. Plus- Brussels sprouts are really “IN” right now, so this twist on a traditional hot dip will be well-received for most guests. And did I mention is delicious?
