Summer is close to any end, and so the buzz of all the To-Do list items and rush of back to school is underway! This makes it hard to have sit down dinners and time to even think about what to make. I am a huge advocate for meals on the grill. They are fast, easy clean up, and if prepared correctly can be a lot healthier of an option!
This meal is also great for hosting summer dinners. Hosting in the Summer is perfect because not only are grilling recipes easier and low maintenance, but then you don’t have to white glove clean your home! haha! Everyone is outside, so the pressure is off!
I was never really sure about adding seafood to a taco dish, but once I stepped out of my bubble and tried these… I was shocked!!! I actually fell in love with this dish while making it, all the colors were pretty intoxicating. With the summer upon us, I have been searching out ways to get in shape. I do not think there is a woman out there that does not dread that little phrase, “Swimsuit Shopping”. I know just the thought of it sends chills up my spine. With that in mind, I have set my eyes on the Whole30 Challenge. I have been on it for two weeks and have to praise that I have not cheated once. Who is super excited that Summer is around the corner? I know I am! There is just something special about being able to spend most of your day outside, enjoying the warmth and basking in the sunshine. If you’re pale like me, a nice covered deck can be the equivalent to Heaven. Another perk is that you really don’t have to follow the kids around the house cleaning up after them! Let them run and play outside all day and it saves you the hassle. And not to mention the simplicity of cooking in the summer.
When we first were married the Hubby’s parents gifted us a grill. It lasted us a really long time! I called her my Dependable Betsy. Ha! This year Betsy needed to retire, so we were on the hunt for a new grill! With the warmer weather finally peeking out in our neck of the woods, we want to spend every moment we can outside to enjoy it. So the journey began!
